Melon Ice Cream

It is summer, it is HOT, and there is nothing better than some cold ice cream to take the heat off, am I right? This isn’t just any old vanilla ice cream though. I like to think of this as a ‘healthier’ version. At least that’s what I told myself, with every bite 🙂

At the start of summer, we went on a 3 week vacation to Africa, and by the time we got back to our property, it had completely overgrown. I found that we had quite a few rock melons (cantaloupe) that were ripe!

When I cut one open, all excited to taste the literal fruits of my labour, I realised that the perfume like taste was not really what I was expecting. I can describe it as eating a musk sweet, that was not really that sweet. I quickly realised that I needed to either give them away, or try use them in a more creative way. I did grow them organically after all. It didn’t feel right to not eat them in some way. 

The weather in Queensland at the moment, is hot and sticky. It is so humid that working outside is proving to be rather difficult. One needs a reward system in place just to get motivated. I decided to try my hand at some ice cream. I’ve actually never made ice cream before, but knew the basic ingredients. Cream/milk, sugar and flavouring. I figured melons are mostly water anyway, so why not? 

It really is simply 4 ingredients; melons, cream, sugar and lemon juice. The best part is, you do not need an ice cream machine! You do however, need a proper blender. 

I tired to blend my melons using this ‘chopper’, and while it did blend, it did not give me that smooth puree that I was hoping to achieve. My ice cream was more of a mix between a sorbet and ice cream. It still tasted amazing though! 

It has been reccomended to me that I buy a Ninja Creami, which I plan to do! Apparently it is THE product to use when making ice cream, smoothies, sorbet and more. Easy 4 Ingredient Melon Ice Cream

Ingredients

  • 600g rock melon (cantaloupe)

  • 300g thickened cream

  • 1 cup sugar

  • 1 teaspoon lemon juice

Directions

  • Chop up the melon into small pieces
  • Blend the melon and lemon juice together until it reaches a smooth puree consistency
  • Whip the cream and sugar together until soft peaks form and the sugar has dissolved
  • Gently fold in the melon puree, until well combined
  • Place into a freezer safe container, and pop into the freezer
  • Let the ice cream set in the freezer for 4 – 6 hours
  • Serve and enjoy
